Grey Rock Rolls Out 'Wild' Winter Menu
Chefs focus on freshness with a farm-to-table approach.
GREEN LAKE, Wis. – December 23, 2013 – Grey Rock, Heidel House Resort & Spa’s flagship restaurant, announces the rollout of a new menu for the winter season. Wild game, prepared in innovative ways for exquisite taste and presentation, highlights the menu.
The new menu builds on Grey Rock’s traditional high standards of dining excellence, offering reborn classic dishes freshly prepared with the finest ingredients. The chefs have collaborated with local and regional produce purveyors to bring a farm-to-table concept that carefully considers both freshness and sustainability.
“As the seasons change, so do our menus; yet we don’t change menus just because it’s time for change,” said food & beverage director Gereson Yongo. “We research to find out what the local farmer, butcher, fisherman is doing and this becomes the source of our inspiration – Not only to create a menu that resonates with the clientele, but that captures the season.”
A few new menu items are the fried venison medallions, whole stuffed trout, bison chateau with horseradish sauce, rack of lamb with mint basil pesto and elk chop in blackberry port sauce. All entrées are listed with a recommended wine pairing to complement the flavors of the meal.
Grey Rock’s lounge is also launching a bar bite menu that includes small-plate versions of the full menu so that guests may sample any of the menu’s flavors without sitting down for a meal in the dining room. Grab a drink from the extensive wine list or innovative martini menu and try the elk tar tar, champagne scallops or piano room trio, which consists of fried calamari, duck sliders and bison tacos.
The winter menu was created by a new culinary team made of Bryan Markel, Grey Rock sous chef; Tom Moskos, executive chef; and Gereson Yongo, food and beverage director.
Grey Rock is currently open for dinner Thursday – Saturday from 5 – 10 p.m. with the lounge opening at 4:30 p.m. On Saturdays, a live pianist entertains in the lounge from 7 – 10 p.m.
Grey Rock offers a timeless menu in a relaxed, lakefront setting. Expansive views of Green Lake from floor to ceiling windows will be sure to relax and enchant guests.
