Heidel House Resort & Spa Chef Wins Award at Pork Competition
Chef Paul Cummings Wins 'Best Use of Soy' at 2013 Taste of Elegance
GREEN LAKE, Wis. – February 12, 2013 – Chef Paul Cummings of Heidel House Resort & Spa received the Best Use of Soy award at the 25th Annual Taste of Elegance contest in Wisconsin Dells on January 31. The event, sponsored by the Wisconsin Pork Association, included seven of the state’s top chefs preparing an original pork recipe that had not previously been featured on their menu.
Chef Paul Cummings and Chef Duane Porter worked together to present an outstanding presentation for the judges. The main course entry was a balsamic glazed pork loin with strawberry puree. It was brined in a calibration of seasonings for 24 hours, then seared to a golden crust and finally baked with a light glaze of balsamic reduction. The entrée was served with miniature apple and bacon pancakes and smoked corn pudding topped with toasted soy nuts. Five different soy ingredients were used in the entry.
