The Food and Beverage Director oversees and directs all aspects of providing the highest quality services and consumable products to Heidel House guests. This position is responsible for the entire inventory of the Big 4 items, including all linens, glass, silver and china, assuring the percentages of breakage and loss are maintained within acceptable levels. They are responsible that all expenses meet or exceed all budgetary goals including food costs, beverage costs, payroll and other expenses. We are searching for someone who is self-motivated, energetic, and detail orientated.
Essential Job Duties:
- Assure proper hiring, terminating, training, directing, and prompt performance evaluations of all Food and Beverage Department staff occurs.
- Responsible for the overall supervision and assurance of efficient and effective operations of Food and Beverage Department personnel, outlets and related areas of service. These include, but are not limited to: Grey Rock Restaurant, BoatHouse, Sunroom, Banquets, Bar services, the Escapade, Pumphouse and any other public area locations which dispense food and beverage items.
- Implement and monitor effective and efficient back-of-the house controls and procedures, including, but not limited to: purchasing, receiving, stock rotation, inventory and cost controls and accounting procedures.
- Implement and monitor effective and efficient front-of-the-house training, controls and procedures to insure all guests are provided with high quality and service excellence in accordance with Heidel House standards and which our guests deserve and expect.
- Effective communication with all department managers, directors and supervisors to insure the team concept and goal orientation and to inform those individuals of information crucial to the effective and efficient operation of The Heidel House.
- In conjunction with the General Manager and Executive Chef, responsible for development, implementation, and monitoring of new menus, daily specials, and food promotions.
- In conjunction with the General Manager and the Beverage Manager, responsible for the development, implementation, and monitoring of new bar items and ideas, promotions, and price structure.
- Manage, develop and expand on Special Events for the property.
- Responsible for the development and implementation of inter-departmental training manuals, assuring these manuals are properly and promptly utilized and adhered to at all times.
- Schedules and conducts periodic meetings of inner departments within the Food and Beverage Department, such as resume meetings, BEO meetings and Food & Beverage meetings. Also introduce new programs, monitor current programs, and assure the effective and efficient operation of those inner departments.
- Assure timely and quality service at all food and beverage locations occurs through proper staff levels, including the presence of a manager and/or supervisor capable of overseeing and insuring effective, efficient operation of those locations.
- Assume MOD shifts as assigned.

The purpose of the Catering Manager is to coordinate and generate new and profitable business. To assist the sales managers in the up sell of existing and potential business. Responsible for generating profitable business through function space, audio visual, and food and beverage revenues. Directly accountable for the coordination and sales efforts of the Banquet Department and responsible for the development of subordinate managers and attainment of department revenue goals. To be assigned customer’s sole coordination contact for an organization’s entire event, including food and beverage. Will solicit catering non-group room events (e.g., specializes in Christmas parties, anniversary, civic organizations, seminars, motor coach and small scale educational, government and corporate groups).
Essential Job Duties:
- Responsible for achieving sales F&B goals in the Catering/Banquet Departments.
- Ensure adequate management coverage within the Catering Department to include weekend and weekday evenings.
- Maintain high personal guest contact by telephone and in person. If necessary, includes visits to the guest’s place of business.
- Responsible for maintaining all established tracing procedures to insure sales and perpetual contact with all accounts in designated territory or assigned groups are up to date and completed on a weekly basis.
- Responsible for accuracy of bookings, accountable for all diary entries, appropriate function spaces utilization, changes, and the communication of such to all appropriate persons involved.
- Responsible for coordinating off site activity for resort groups (e.g. Golf, Fishing, Transportation, etc.) through recreation and concierge departments.
- Responsible for reviewing group sales contract at time of coordinating event to insure all contractual obligations are fully understood. Will be responsible for the entire coordination of all assigned conferences with or without guestrooms attached. These include preparation of group resumes and/or cover sheets, all meetings, food and beverage, VIP requests, and guest room assignments/changes after contractual arrangement are entered into with Sales Manager.
- Will attend/represent the Catering Department at required meetings, i.e., Staff, Resume, BEO, Catering, etc.
- Is to be the main liaison to the Food and Beverage Departments. To be responsible for the communication effort of the Catering Department with all departments at the resort.
- Is required to organize and conduct, with Sales Managers, pre-Convention meetings, that are deemed to be warranted, for any group planning to use the resort.
- Will develop and implement theme parties, props, special event parties, holiday parties, etc., as needed.
- Responsible for following proper financial controls regarding billing and advance payments.
- Responsible for representing the hotel at any trade show deemed appropriate by the Director of Sales and Catering.
- Will greet all clients at time of arrival to the resort. Will introduce clients to all necessary personnel involved in the execution of the conference. Responsible for continually monitoring the client’s satisfaction while on property.
- Will assist the Sales manager on conducting client exit interviews prior to the departure of the group from the resort.
- Responsible for performing MOD duties as scheduled.

Night Auditor needed for a part-time position. Must be available Sunday - Saturday, 11 p.m. - 7 a.m. Responsible for performing audits on all outlets, balancing credit cards to balance sheet, balancing and posting cash functions for the day, answering guest calls, making reservations, locking pool area, making security rounds of the property and shuttling guests as needed.
Qualified candidates will have good communication skills, strong Excel and Word knowledge with an attention to detail. Must be flexible to work any day of the week. Previous experience dealing with deposits, cash receipts or basic accounting knowledge preferred. $8.25/hr.
Cleaning Person - Evensong Spa
Full time position available for individual to do overall cleaning at Evensong Spa. Will be responsible for mopping, dusting, cleaning shower and whirlpool areas, rest rooms, laundry, etc. Must be responsible and hard working. Flexible to be an early 1st shift, 4am start time, or 2nd shift with a 4pm start time.

The Sous Chef is primarily responsible for the operation of the Banquets and Outlet restaurants. The Sous Chef must be able to make decisions when the Executive Chef is not available. The position requires leadership qualities and a professional attitude.
The Sous Chef will be responsible for:
- Adhering to all approved recipes and portion sizes, teaching consistency to all kitchen staff
- Assuring that baked items are made daily, following established storage and handling guidelines
- Delegating and supervising all prep work for the kitchen staff
- Plate appearance on all entrees
- Proper labeling, dating, storing and rotating of all food items
- Preparation of all soups and sauces
- Instructing cooks on all proper procedures for the preparation, cooking, and presentation of all entrees, soups, sauces, vegetables, salads, etc.
- Maintain high sanitation standards to conform to set facility standards checklist
- Labor and food costs within the scope of the day shift
This is a full time salaried position. Must be available Sunday - Saturday between the hours of 5am - 10pm as the department needs. A degree in culinary is preferred with a minimum of 2 years experience.

The Housekeeper is responsible for the cleanliness of guestrooms. Duties will include making beds, dusting, vacuuming, cleaning all areas of the bathroom, and other various cleaning responsibilities. He/she must clean to the established standards of excellence at Heidel House Resort. This is a very visible position, so the ideal Housekeeper is expected to respond to guests and their needs keeping the "Yes We Can" attitude in mind at all times.
Pay is $7.50/hour. Full-time, seasonal positions.
